There are a myriad of rules and regulations to follow, including, completion of the Acidified Foods Processing and Packaging Better Process Control School. While this this short-course will not certify you to sell acidified foods, it will give you a better understanding of the process and how you can get started!

... Packaged Foods Manufacturing Short-Course
Date: Monday, February 11
Time: 9:00a.m. to 4:00p.m.
Registration Fee: $20
Location: TBA, Raleigh, NC

Organizers: CEFS, Wake County Cooperative Extension, and NC State University

Featured Speakers: Dr. Fletcher Arritt, Food Safety and Processing Extension Specialist, NCSU, Dr. Benjamin Chapman, Assistant Professor and Extension Food Safety Specialist, and Allison Smathers, NCSU, Entrepreneurial Food Program Assistant

Thinking about selling fermented, acidified (pickled), or other packaged foods at restaurants, farmers' markets or retail vendors? There are a myriad of stringent guidelines that must be followed in order to do so, including keeping certain records or perhaps acquiring a label, getting a process authority letter and taking the multiday Acidified Foods GMP School for Pickle Manufacturers course or others offered by NCSU.

This workshop is designed to give participants a VERY general idea of what is expected by regulators to manufacture and sell packaged food products and about the Pickling School, briefly covering such topics as: basic food safety, supervisory skills, pH levels in your products, sample submission process, labeling, kitchen certification, record keeping and more. The purpose of this course is to provide you with a VERY BRIEF outline of the processes you will need to go through in order to sell your products.

THIS COURSE WILL NOT CERTIFY YOU TO SELL ACIDIFIED FOODS OR ANY OTHERS TO THE PUBLIC.

Winston-Salem Centennial Celebration

Winston-Salem 100 yearsParade, Music, Documentary Highlight City Centennial Celebration

Marketing and Communications - Jan. 17, 2013

Winston-Salem will celebrate its centennial with four days of activities May 9 – 12 that include a parade, the world premiere of a festive piece for orchestra commissioned for the centennial, a community worship service, the premiere of a centennial documentary, a community toast with a specially brewed “centennial” beer, and more.
The celebrations will begin on Thursday, May 9, which is the 100th anniversary of the day that the consolidation of Winston and Salem into one city took effect. A historic marker will be unveiled on First Street at 6 p.m., followed by a reception and open house in City Hall to view historical displays.
The reception will be followed by the premiere of “Merger: Making the Twin City,” an hour-long documentary produced by WSTV 13 that recounts the origins of Salem and Winston and their tortuous path to consolidation. The film will be shown at A/perture Cinema on Fourth Street at 8, 8:30, 9 and 9:30 p.m.
On Friday, May 10, all city residents who are or will be 100 years old in 2013 are invited to a special Centenarian Luncheon at the Benton Convention Center. That evening, the Arts District will host a “Blue Moon” gallery hop. The gallery hop will be augmented by displays of historical artifacts by the Police and Fire departments, music and art by local students, and a free concert by the Vagabond Saints Society from 7 to 10 p.m. The concert will be preceded by a community toast with a special centennial beer crafted for the occasion by Foothills Brewing, or Primo Water’s “centennial” water.
Old Salem Museums and Gardens will host a free Community Day at Old Salem on Saturday, May 11. In addition to free admission to all Old Salem attractions, visitors will also enjoy colonial crafts, demonstrations of the Tannenberg organ, recitals in the style of 18th century performers, an heirloom puppet show and performances by the Winston-Salem State University Jazz Ensemble.
A centennial parade, featuring marching bands, special floats, and impersonators of historic figures will start at 2 p.m. in Old Salem and march up Main Street into downtown. The parade will conclude at Corpening Plaza, where a party in the plaza will be held from 3 to 8 p.m. featuring food and merchandise vendors and a free concert headlined by Pat "Mother Blues" Cohen.
Also on Saturday, a centennial scavenger hunt in Old Salem and downtown will be held from 4 to 7 p.m., followed by an after party at BB&T Ballpark. Team registrations will be accepted starting March 1.
Sunday, May 12, is the anniversary of the first meeting of the consolidated Board of Aldermen. A non-denominational community worship service and love feast will be held from 4 to 5:30 p.m. in the May Dell on the campus of Salem Academy and College. Also Sunday, the Winston-Salem Symphony will perform the world premiere of “Hail the Coming Day,” a festive piece for orchestra composed by Dan Locklair of Wake Forest University in honor of the centennial. The premiere will be part of the symphony’s regular May concerts scheduled for 3 p.m. May 12 and 7:30 p.m. May 14.
The centennial activities were planned by the Centennial Commission, a group of citizens that has been overseeing the city’s 100th birthday celebration. More information about the centennial celebration, including a calendar of events, is available at www.W-S100years.com

Triad Farm to Table

Triad Farm to Table is a growing community of farmers and consumers who work together in an effort to promote and support fresh, locally grown produce. They are a commercial cooperative selling fresh local produce to neighbors. The consumer pre-orders their box of produce and picks it up at their choice of convenient pick up locations in Forsyth County. Through this direct symbiotic relationship, they are able to pay our farmers more, while consumers pay the same. Members receive a weekly newsletter with their box, which includes recipes, fun facts about the produce in the box, and where to get more of it. They are promoting the sustainability of agriculture on the local level and encouraging success for our future generation of farmers.
Eat local, eat healthy, support your local farmers…... win, win, win for all!
Check the Triad Farm to Table website frequently for news on additional pick-up sites, extra member buying opportunities and the latest co-op news.

WNC Cheese Trail Newsletter

Here's your chance to subscribe to the WNC Cheese Trail newsletter! Great opportunity for those of you in and near Western NC to visit the area's greatest cheesemakers or just keep up with what's happening via their newsletter.  Sign up here.

Buffalo Creek Farm and Creamery is not located in the Western Region, but we love keeping up with our friends! Maybe the Piedmont and Eastern part of the state will start their own cheese trail in the future.

Connecting the dots on the Trail...

We've come a long way...

Our region's cheesemakers have once again proven to be among the bravest of souls. For almost a year, a group of committed artisans have held their breath and jumped into a nebulous but consuming task: creating the WNC (Western North Carolina) Cheese Trail.

Now the payoff begins. After a lot of work, the WNCCT has actualized as a network for artisan cheesemakers, a venue for agritourism and a resource for our rich community of farmers and epicureans. We have a website, a fantastic new logo, and we've created the first version of the Official WNCCT Map...not to mention all the legalities that we've crossed off the list! And now our sights are set on developing an interactive digital map alongside a physical printed map for distribution.

Many acclaimed cheesemaking operations in the area were quick to become Cheesemaking Members, and there has been a steady stream of Associate Members joining in support of local artisan foods and gastro-tourism. We hope that plenty more area cheesemakers and food destinations will continue to join the Trail and benefit from this network of passionate food producers.
The Trail's Cheesemaking Members have lent a lot of labor and resources to getting this concept off the ground, and many are shifting their operations in order to accommodate the tourism the Trail will generate.

Here's the Official List of WNC Cheesemaking Members:

Member Farm Profile:

Yellow Branch Farm
Robbinsville, NC
Bruce DeGroot and Karen Mickler

Yellow Branch has been producing farmstead cheese from Jersey cow milk since 1986. Both their farm and pottery are open for scheduled visits year-round. Here's what they have to say:

"Yellow Branch is very excited about the WNC Cheese Trail. As we begin our 27th year tending the cows and making cheese, growing food for ourselves and our family, we celebrate and are grateful for the growth of the number of cheese makers and facilities in WNC and across the state and nation. In 1986 we were on the cusp of the development of the artisan cheese industry in the United States. Our continued success is in large part due to the flourishing business of folks making delicious cheese which is in great demand. When we started knocking on doors looking for stores to purchase our cheese, we were met with astonishment and a little bit of skepticism since "good" cheeses were considered to be found only in Europe. So here we are today, surrounded by folks making excellent cheese in Western North Carolina and above all, grateful for all who support our endeavors by purchasing and enjoying our products. Thank you!"

www.yellowbranch.com
Again, thank you for sharing an interest in the WNC Cheese Trail. This couldn't exist without the community's hard work and precious input. We hope that the Trail will enable Cheesemaking, Associate and all other Members alike to gain business and connections, and that this network can enrich our craft and spread some of that Western North Carolina talent.

Gratefully yours,

The WNC Cheese Trail

Kidding Barn Addition

With some great weather and help today, we got the roof on our kidding barn addition. More room for my "good hay" storage and a loafing area under cover for my milkers too. Believe it or not, there is cement under all that mud - - here's hoping to get some granite dust spread soon. — at Buffalo Creek Farm and Creamery, LLC.

Barn Quilt Trail

Quilt Trail

A new project funded by the Yadkin Arts Council and the Tourism Development Authorities of Yadkinville and Yadkin County is taking shape -- a Barn Quilt Trail. You can make your own barn quilt, and once approved, be part of the quilt trail itself or we can furnish you with the names of folks who will make the quilt for you, using your choice of a pattern.
The quilt trail will feature unique quilts on each barn or building. There will be no duplications of patterns along the trail.

A printed brochure and trail map will be produced using a portion of the proceeds from the quilts and trail fees.
The trail map is in production at this time.

If you already have a barn quilt and it meets the trail requirements the cost for being on the trail is a one-time fee of $25. Certain trail restrictions apply.
