Women Working in the Meat Business Retreat

Female farmers, processors and food professionals in the niche meat industry - two days, two nights with Master Butcher and third generation meet cutter, Kari Underly of Range Inc. Hands on butchery, small setting, marketing and merchandising, skill building and proficiency in whole animal utilization. Roll up your sleeves ladies!



NC Choices is hosting a Women Working in the Meat Business Retreat May 20th – 22nd in Chapel Hill, NC. The retreat, sponsored by the Farm Credit Associations of North Carolina,... is in response to the emerging role of female professionals within meat businesses. “Women are increasingly playing a leadership role in the meat sector, whether it’s as livestock producers, meat butchers, chefs or business owners,” says NC Choices’ Program Coordinator, Sarah Blacklin. “We’ve developed a unique retreat designed to address the challenges female professionals face in a male-dominated arena."

The two-day, two-night retreat will focus on hands-on meat cutting, marketing, and merchandising. Both sessions will be facilitated by Master Butcher Kari Underly, author of The Art of Beef Cutting: A Meat Professional’s Guide to Butchering and Merchandising.
The Farm Credit Associations of North Carolina are providing scholarships for female producers, meat processors, and food professionals located in North Carolina. “This is an important need and we are thrilled to be supporting NC Choices’ program,” said Maggie Hamm, SVP of Marketing for Carolina Farm Credit in Statesville, NC. “This event will be a superb opportunity for women who work in local and niche meat business to learn more about the important role they are playing in advancing the local meat industry.”

A number of local business are also sponsoring the event, including Lantern Restaurant, which will provide space for participants to learn how to breakdown a beef and hog carcass, fabricate specialty cuts and create and prepare value-added products. The Chapel Hilltop Lodge, a unique agri-tourism lodge located on 46 acres and eight miles outside of Chapel Hill, will provide retreat accommodations.

“We look forward to bringing our female leaders together to network and increase their technical skills,” says NC Choice’s Blacklin.

Retreat Package: $400 per participant. Includes overnight accommodations at The Chapel Hilltop Lodge eight miles outside Chapel. Lodge sits on 46 acres and features an organic garden, saltwater pool, extensive balconies, patios, pool table, exercise room and expansive common space in a beautiful agricultural setting. Meals include complimentary breakfast, lunch at the Carolina Brewery, cocktail social hour, and a special dinner at Lantern Restaurant, recognized by Gourmet Magazine as one of "America's Top 50 Restaurants" and "best farm-to-table restaurants". Participants will gain hands-on whole hog and beef butchery training from Kari Underly, a third generation meat cutter, inventor of the flat iron steak, and James Beard Award nominee. Participants will improve their understanding of how to market and merchandise meat products with increased proficiency, communication, and confidence in an intimate environment with top industry professionals. Participants will learn how to make specialty sausages and leave the retreat with meat to take home for their families. Butchery classes will be located in “Lantern Table”, Lantern restaurant’s new community kitchen and private dining room on Franklin St. in downtown Chapel Hill. Space is Limited to 25 participants and registration occurs on a first come first serve basis.

Grapes & Small Plates

Grapes & Small Plates, A Local Food & Wine Event returns in April.
Grapes & Small Plates returns in April to showcase the tastes of Winston-Salem with close to 20 area restaurants. After a great showing and community participation 2012, they will be back throughout the month of April on Tuesdays and Thursdays. Participating are independently owned and operated restaurants who will tempt patrons with signature small plates and optional local wine selections.
Participating customers will have the opportunity to enter into drawings each time they dine for Grapes & Small Plates. A drawing of all participating guests will be held at the end of the month, with winners receiving prizes, including gift cards to participating restaurants and donated items such as a brand-new chef's knife set.

The event kicks off in early April.

Goat Milk Aged Cheese & Chevre in the Piedmont Triad area of North Carolina (Greensboro, Winston-Salem, High Point)

We are a Grade B dairy and the goat's milk comes from our own Nubian and Nigerian Dwarf dairy goats. We are a farmstead operation which means the cheese is made from the milk of our own herd (no milk is purchased) and on the farm where the goats are raised. It is produced by hand in small batches.

Quick reminder that we will be hosting Piedmont Farm School this morning. The Farm Store will be open as usual but please be aware that parking/shopping will be more difficult until after 12 Noon. Thanks for your understanding!

Our farm has been accepted to two Farmers Markets for the 2013 season and will be selling cheese at those in addition keeping Let It Grow Produce and the farm store stocked.  We are staying busy at the farm and preparing for even busier months to come!

Upcoming Class: Basic Goat Husbandry

Many, many people express interest in learning more about goat care, something we view as an important responsibility. We are now excited to offer a day-long workshop to share our knowledge. Our March 30 Basic Goat Husbandry Workshop session filled up, so we've now opened a second date, on April 6, from 11am to 6pm. Each workshop is limited to 12 participants. To register for the workshop, please use the Paypal link below (which enables credit card processing, even if you don't have a paypal account). Cost for each participant is $110.
We are one of two goat dairies in North Carolina which bear the Animal Welfare Approved third party certification. As of right now, we have 150 goats on our farm; we expect approximately 150 kids to be born on-farm this spring. Some will be born prior to the start of this workshop, which will enable us to cover a broader range of topics. Depending on the whim of our does, who do seem to have a sense of theater, perhaps we'll see a live birth during the workshop. We are entirely pasture-based. If it's pouring rain that day, we'll reschedule for the same day/time the following week. If it is just sprinkling, the show will go on. Bring a lunch—it's a long day! We'll have handouts for you to take home, but also bring a notebook. We're covering a lot of information in a short period of time.

April 9 Tried and True Annuals - Sherry Sunday, Master Gardener Volunteer, will discuss
growing annuals that have been successful in the gardens at Tanglewood. The discussion will

The North Carolina Arboretum celebrates Southern Appalachian traditions during Heritage Crafts Day, 11 AM until 4 PM. Features artists and crafters whose work reflects the heritage of Western North Carolina. Much of the artistic expression of mountain crafts originates from the character and nature of plants. Fine crafts made from local and natural materials will be highlighted, as will art created from recycled and sustainable sources. All art and craft represented is original and handcrafted by the exhibitors.

October 12-13, 2013: Carolina Bonsai Expo (See Fall at NC Arboretum)
This two-day horticultural extravaganza, situated in the midst of the colorful mountains, features a display of bonsai from enthusiasts in a six-state region, live demonstrations, workshops, and a popular bonsai marketplace. The North Carolina Arboretum in Fall is ablaze with color in fall, and the North Carolina Chrysanthemum Society’s Annual Show is a perfect occasion to celebrate the fall foliage season. The popular annual judged show showcases hundreds of chrysanthemum blooms in vibrant and varied colors. The exhibits will be judged by Accredited National Chrysanthemum judges and strict NCS standards and highlights the exceptional variety in size, shape and color of these popular fall flowers. Visitors are invited to enjoy educational talks on chrysanthemum growing.

The mission of The North Carolina Arboretum is to cultivate connections between people and plants.
The North Carolina Arboretum is located next to the Blue Ridge Parkway entrance ramp at Milepost 393. From I-26, take Exit 33 and follow Blue Ridge Parkway signs for two miles to the entrance ramp. Arboretum grounds are open 7 days a week. Property hours are 8 a.m. to 9 p.m., April-October and 8 a.m. to 7 p.m., November-March. CFSA’s farm tours were created to better connect farmers and consumers. Visitors are able to see the reality of what goes on at a sustainable small farm. How do farm families balance their busy lives? How do they grow food in harmony with nature? How do they market their products and make it financially?

We are especially happy that lots of children come on the tours. Today so many children have read story books about farms and farm animals, but have never actually seen a farm. By touring, children learn where their food comes from and what a real farm is.

Horizons Memorial (Play)



Tickets are now on sale for the premiere of Horizons Memorial, a new play written by award-winning playwright Samm-Art Williams. The opening night premiere performance is March 22 at the Arts Council Theater. Additional performances are on March 23 - 24. The play is presented by the North Carolina Black Repertory Company (NCBRC), and is being directed by Broadway veteran Mabel Robinson. Robinson, a Tony Award nominee and Broadway veteran, is an internationally known actress, choreographer and director.

The play focuses on the history of the property in Northern Forsyth Country that presently houses the Horizons Residential Care Center for people with severe physical and developmental disabilities. The site was originally an orphanage for African American children that opened in the early 1900’s, and was active until 1972, when Horizons assumed control of the property.

The Board of Directors for Horizons and the North Carolina Black Repertory commissioned Williams to write this play to commemorate Horizons' 40th Anniversary. Williams is originally from Burgaw, N.C., and has a long resume featuring acting roles and producing TV shows and Broadway plays.

“There is tremendous historical significance of the property, not only to the African American community, but the entire community,” said David Adams, Horizons’ Chief Executive Officer. “The site was originally named the Memorial Industrial School, but it was also known as the Colored Baptist Orphanage. Several generations of children were raised and educated on the site until 1972, when it closed and the property was transferred to Horizons.”

The play highlights the historical significance of the property through the eyes of the children who lived there as orphans and through the eyes of employees who work there now caring for children who have little understanding of their surroundings.

Old Salem Cobblestone Farmers Market: Saturdays from 9am-12pm, April 13th- November 23rd
The Saturday market will begin at the Milton Rhodes Center for the Arts and then move to its regular location in Old Salem on May 18th for the rest of the season. Old Salem is host to the Komen Race for the Cure on May 4th and the Winston-Salem Centennial Celebration on May 11th.

Cobblestone Farmers Market Downtown: Tuesdays from 10am-1pm, April 16th- November 26th
For the 2013 season, CFM Downtown will be held at the Milton Rhodes Center for the Arts (the same location as the Pop Ups).


The Cobblestone Farmers Markets are high-standards, producers-only farmers markets. Vendors use healthy, sustainable, and humane practices. The Markets are operated by Cultivate Piedmont, a program of Carolina Farm Stewardship Association.
